Growing up in Rhode Island, Chris Cosentino spent his time clamming, commercial fishing, and cranking the pasta machine in his great-grandmother’s kitchen. From there it was a straight shot to Chef/Owner of Incanto in San Francisco. Drawing from his Italian roots, Chris has become famous for his love of Offal, or as Chris sums it up, “no guts, no glory”.This is evident in his iconic shoe “the 5th quarter”, which features a photograph of honeycomb tripe… Chris’ favorite cut of meat.
